Now some dampness has come back to the land we are starting to see new growth of the second wind of wild edibles. Items such as dandelion, nettles, plantain are all starting to show there buds again through the dry and deadness that hangs above them.
One thing to notice though is that the trees are way in front just check out your nearest conker tree look at the leaves !!!

Now we are getting deeper into the amazing game season heather blossom is a perfect garnish for all your game dishes.
Although it adds a beautiful colour to the dish it also deliveries on the nose as its fragrant if heated.

James has been busy in the woods over the last few weeks sniffing out all the fennel blossom he could find. He has picked enough to keep us going for a few months of this almighty fennel pollen.
The pollen is dried then ground with added blossom and wild spice to give you a dust that will send your senses into overdrive.
Get a few pots in – it lasts for over a year but once its all sold there won't be any until next year get yours now to avoid disappointment.

This meaty mushroom will make your mind go into severe overdrive as the texture is insane.
Chicken of the wood is a difficult thing to find as it can grow high up into the canopy, in fact, these weeks pick James had to get his extendable ladders out to save it from becoming birds resting place.
Deep flavours ooze from this meaty fellas be quick though as it will disappear very fast.
Pine Needle - **In Stock**
Foraged Spruce is a flavour that if you haven’t had the opportunity to use before you must give it a go.
Some infuse through stock, cream or dehydrate and grind, create a sorbet or even a syrup. A very simple method to get a radical result is to simply use it sat under a roasting joint of beef.
As the heat penetrates the spruce you can smell it's deep notes as it smoulders whilst roasting in the oven.

Birch Sap Syrup **In Stock**
James has been slowly maturing his harvested birch sap which he tapped back in April.
It has now been reduced to a most delightful syrup that is packed with a sophisticated sweet flavour like you have never tasted before.
Birch sap can only be tapped for a very short period once a year and if you wanted to make a syrup out of 200lites you would probably get only around 200ml so you can easily see how much Birch sap has been used to create this syrup.
