Whats The Wild Got For Us This Week ??

Now some dampness has come back to the land we are starting to see new growth of the second wind of wild edibles.

Items such as dandelion, nettles, plantain are all starting to show there buds again through the dry and deadness that hangs above them.

One thing to notice though is that the trees are way in front just check out your nearest conker tree look at the leaves !!! – The arrival of autumn is most definitely inbound (oh my word)

Birch Sap **Special**

James has been slowly maturing his harvested birch sap which he tapped back in April.

It has now been reduced to a most delightful syrup that is packed with sophisticated flavour. Birch sap can only be tapped for a very short period once a year and if you wanted to make a syrup out of 200 liters you would probably get only around 200ml so you can easily see how much Birch sap has been used to create this syrup.
