Passion Fruit Marshmallows Anyone???

Sugar 500 gr. Liquid Glucose 100 gr. Water 200 gr. Gelatine leaves 11 unit. Albumina powder 18 gr. Passion fruit puree 175 gr. Sosa passion fruit natural flavour 20 drops.

FOR THE COATING Icing sugar 200 gr. Corn starch 100 gr. Dextrose 100 gr.

Mix the passion fruit puree and the albúmina powder and whip in the Kitchen Aid. In the meantime cook the sugar + liquid glucose + water until reach 130ºC. Once the syrup is done, pour in it the gelatin leaves ( previously soaked in very cold water ) well strained. Pour the syrup in the whipped passion fruit puree little by little. Then keep whipping at high speed until warm. Add the passion fruit natural flavour. Pour the mixture in a frame with the coating mixture on the bottom to avoid the marshmallow dough stick on the silpad or silicon sheet.
