Ham Filaments
CASSIS DRY MERINGUE Anyone ??
50 g Cassis purée
5 g Sosa Sojawhip
150 g Sugar
Mix the cassis purée with the Sojawhip.
Whip using the KitchenAid.
Add the sugar in 3 parts during the whipping process, until obtaining a firm meringue.
Introduce the meringue into a pastry bag with a smooth nozzle of 4mm.
Spread on a Teflon sheet.
Dehydrate for a minimum of 6h at 40ºC until dry and crunchy.
