For many years we have worked extremely closely with the team at Smithy mushrooms to inspire our minds around all things Fungi
It's so very easy to take something for granted like the trusty mushroom when in fact it's ultra complex to grow and takes much science/skill to get the flavour profile to be the best on the planet.
John and team at Smithy Mushrooms are true masters of their art around growing mushrooms, based in their facility in Ormskirk they nurture they grow some most radical flavours and textures that will simply blow your mind.
John is a total mushroom addicted chap and he loves a fungi challenge, during our trip over to Smithy the other day he got so excited around king oysters we had to all stop for a sit down in the darkened sheds as it was simply far too exciting to take in any more info around such a meaty mushroom.
Daily harvested by hand from the growing rooms the team are true masters and deserve much praise. Next time you dig deep into the mixed trays containing shitake, enoki, oyster and other delights just keep John in your mind as his expertise and passion is in every box.
Shitake takes 100 days to germinate then 3 days to grow, John produces 53 tonnes of shitake a week -How much of a challenge must that be not to mention how outstanding that must be to see ???
